What the evidence review says
Fumaric acid is a tart acid used in drink mixes and sweets. We found no notable concern at the levels allowed in food. Older high-dose animal findings were not the basis of the current evaluation. EFSA had not yet published its updated review as of its 2024 data call.
No notable concern at the levels authorized in food. Older high-dose animal findings, including testicular changes after injection in rabbits, were not the basis of the current oral evaluation. The open point is procedural: EFSA had not yet published its food-additive re-evaluation as of the 2024 data call, and the EU still uses category maximum levels rather than unrestricted use.
